Steak with “Finicky Bitch” Rub

Ingredients:
  • 3 pork shoulder blades
  • 1 cup brown sugar
  • ¼ cup Morton Tender Quick cure
  • 1 tbsp summer savory
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • ½ tsp rosemary
  • ½ tsp fennel seed
  • ½ tsp coarse black pepper
Directions:
  1. Cover steaks with the rub and place in large Ziploc bags
  2. Flip and “massage‟ the steaks every 8 to 12 hours for a day and a half
  3. Rinse them under cold water for 3-4 minutes, then soak in a change of fresh cold water for 15 minutes
  4. Pat dry
  5. Cook and enjoy
