Stuffed Pork Loin

Ingredients for stuffing:

  • 1 lb of crab meat
  • Garlic shrimp
  • Green onion
  • Old bay spice

Ingredients for brine:

  • Salt
  • Brown sugar
  • Lemon peel
  • Orange peel
  • Garlic
  • Onion


  1. Soak loins in brine for 3 hours
  2. Blend all ingredients for stuffing together in blender
  3. Stuff the chops (use a fish filleting knife to work some nice-sized pockets into the side of the chops and then work in the stuffing)
  4. Secure the openings with some toothpicks and then place on the grill (option: add rub to the outside of the pork loins)
  5. Grill them on the Green Egg/grill at 325F until they reach an internal temperature of just over 140F (about 30 minutes)
  6. Elevate: make a sauce for the chops! Use half a pound of bacon, onions and garlic
  7. Add in cream cheese and milk to create a thick creamy consistency
  8. Add Pepper and oregano to taste
