Beer & Onion Soup

  • 10 cups onions
  • ¼ cup butter
  • 1 tbsp flour
  • Salt and pepper to taste
  • 1 tbsp dijon mustard
  • 500 ml beer
  • 4 cups beef broth
  1. Slice onions and fry them in a pan with the butter
  2. Add the flour, salt, pepper, and dijon mustard (sauté for about a minute)
  3. Then add the beer and beef broth and let simmer
  4. Put soup in bowl with croutons (choose homemade if you like) and then top with cheddar before sticking it under the broiler (let the cheese just start to harden)
