Ingredients:
- 6.25kg eye of round beef
- 1kg fresh ground pork
- 1lb bacon (packaged)
- 1lb pepper jack cheese
- 120g dried mushrooms
- 350g fresh sweet onions
- 75g sun dried tomatoes
- 120g fresh dill weed
- 40g sesame seeds
- 600g bread crumbs
- 200g Dizzy Pig “Cowlick”
- 700ml beer (2 cans)
- 800ml cold water
Directions:
- The cheese is kept separate as is the dill weed, sesame seeds, bread crumbs and spices
- Blend into the meat the mushrooms, tomato, onions and bacon
- Place into the grinder and in mere minutes, sausage is ground.
- Mix in the rest of the ingredients
- Stuff the casings with the meat mix
- Grill the sausages!
