Cheeseburger Deluxe Sausage

  • 6.25kg eye of round beef
  • 1kg fresh ground pork
  • 1lb bacon (packaged)
  • 1lb pepper jack cheese
  • 120g dried mushrooms
  • 350g fresh sweet onions
  • 75g sun dried tomatoes
  • 120g fresh dill weed
  • 40g sesame seeds
  • 600g bread crumbs
  • 200g Dizzy Pig “Cowlick”
  • 700ml beer (2 cans)
  • 800ml cold water
  1. The cheese is kept separate as is the dill weed, sesame seeds, bread crumbs and spices
  2. Blend into the meat the mushrooms, tomato, onions and bacon
  3. Place into the grinder and in mere minutes, sausage is ground.
  4. Mix in the rest of the ingredients
  5. Stuff the casings with the meat mix
  6. Grill the sausages!
