  • Prime Rib Beef Roast (Rib Bones On)
  • Oil
  • Favourite rub
  • Smoking chips

  1. Oil the prime rib, and season with your favorite rub
  2. Put on grill (indirect) for about 4 hours at 220F (smoke if you can – choice of preference is sweet maple and a dash of hickory chips)
  3. Run the internal temperature up to 133F
  4. Let the roast cool for 15 minutes under tin foil
  5. Cut the string and roll the roast off the bones and re-season the rack of ribs before putting them back on the grill for another hour
