Ingredients:
- 1 1/2 lbs ground pork
- 1 cup finely chopped sweet onion
- 2 tbsp minced garlic
- 1 tsp kosher salt
- 1 tsp ground white pepper
- 1 tsp ground black pepper
- 1 tsp ground cloves
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 cup half & half (10% cream)
- ½ cup bread crumbs
Directions:
- In a large pan, add the pork and brown through
- Add the onions and garlic, until translucent
- Add the remaining spices along with the cream and bread crumbs
- Reduce the heat to low, cover, and cook, stirring occasionally (1 hour)\
- Then cook uncovered, continuing to stir, until thick
- Adjust the seasoning
- Transfer to several ramekins about ½ cup each
- Pour melted lard to just cover the pork
- Cover and refrigerate until well chilled (overnight)
