Ginger Spiced Cookies with KOOPS mustard

Ingredients:
  • 2 ½ cups all-purpose flour (can be made with gluten free flour 1:1)
  • 1 tbsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 2 tsp Kosher salt
  • 1 tsp baking soda
  • 1 cup unsalted butter (soft)
  • 1 cup sugar
  • 1 large egg
  • 2 tbsp molasses
  • 2 tbsp maple syrup
  • 1 pinch of turbinado sugar
  • 5 tbsp KOOPS stone ground mustard
  • 1 tbsp heavy cream
  • 4 tbsp candied ginger finely diced
Directions:
  1. Mix flour, spices, baking soda, and salt together
  2. Beat butter for about one minute, then add sugar, and beat until fluffy
  3. Add the egg and continue beating
  4. Add molasses, maple syrup, mustard, and cream
  5. Add flour mixture to moist batter and mix for another minute
  6. Scoop dough into one inch balls and place on lined cookie sheet
  7. Chill for a few hours
  8. Sprinkle turbinado sugar on cookies prior to cooking
  9. Cook in a preheated oven at 350F for 12 minutes
