Ingredients:
- 8 cups of diced sweet potato (2 inch cubes)
- ½ pound of butter
- 1 cup sugar
- 1 tsp cinnamon
- 2 tbsp candied ginger
- 2 cups cream
- ½ tsp nutmeg
Directions
- Toss potatoes in some seasoned water and boil for 5 minutes
- Leave on stove but turn off the heat
- Once cooled (they should be soft), add butter, sugar, cinnamon, ginger, cream, and add some fresh grated nutmeg
- Process all with a stick blender
- Bring to heat and serve
